Ingredients
- 4.5kg Pork Meat
- 27g Salt
- 1g Cloves
- 15g Red pepper flakes
- 8g Mace (ground)
- 8g Nutmeg (ground)
- 6g Fresh crushed garlic
- 475ml Chilled water
- Collagen Casings (Thin) or Sheep Casings
Instructions
- 1. Using a 10mm mincer plate, mince the pork.
- 2. Once minced, add the salt, red pepper, mace, nutmeg, cloves and garlic.
- 3. Mix ingredients together thoroughly.
- 4. Mince again using a 4mm mincer plate while adding water.
- 5. Fill into sausage skins and tie into 10cm links.
- 6. Refrigerate for use.
